Corn Flowers

You will need

            • 500 gr dried corn
            • 11 ½ tsp salt
            • 100 cc lime paste solution
            • ½ part of a fairly young coconut, thinly grated
            • 100 gr granulated sugar for sprinkles

What You do

1. Soak the corn overnight, rinse, drain. Boil corn in 2000 cc fresh water and lime paste solution until half done or for about 1½ hours. Remove and drain. Transfer to a winnowing tray and rub until the skin peels off. Rinse several tirnes until water is completely clean, then boil again in ±2000 cc water with a little salt until the corn kernels pop or for about 3 1/2 hours. Drain.

2. Serve the with grated coconut. And sprinkle with granulated sugar.


Note:

  • Add more water if the water level is low and the corn is still hard. Continue to boil until soft
  • Cassava crisps, Colored cake layers and Corn flowers are an insepa­rable snack trio. In traditional markets, this kind of cookie is placed in bamboo baskets.
Serve approximately 10 small plates.
